About This Coffee
Popayan, Cauca is located in the Colombian Massif. It is in a plateau located at nearly 1,700 MASL and its surrounding coffee is produced in the beautiful undulating slopes of Cauca.
The so-called Meseta de Popayan is sheltered by the Andes mountain range which helps generate homogeneous climatic and altitudinal characteristics. The result is one of the most outstanding Colombian coffee origins.
The coffee is produced by approximately 80 growers selected for their known consistency and the cup profile of their coffees. Coffees from this program are paid based on the quality, often reaching premiums of 20% above market price.
The Popayan Reserve coffee bean was selected by us for its bold and lingering sweetness that stands out from other colombian coffees. Colombian coffee growers produce a myriad of different coffees ranging from low altitude earthy coffees to high altitude sweet and dense coffees.
As the Popayan Reserve is a high altitude grown coffee, we charge the beans at a high temperature to allow heat to efficiently penetrate the core of the coffee bean in order to develop the “in your face” dark chocolatey finish. We also shorten the pre-development time and extend the post development phase to accentuate its bold flavour whilst preserving its tea-like characteristics that is pleasing to any coffee lover’s palate.
