As our latest premium series release, we are excited to share with you a coffee that draws inspiration from the winemaking industry.

 

The Mossto process is a modern approach to producing specialty coffee that unlocks a new dimension of flavour complexity for a coffee, creating a cup that resembles that of a delicately aged wine, with notes of muscat grapes, peach, and berries.

 

When paired with milk, the coffee reveals another layer of subtlety and sweetness, with lingering notes of vanilla ice cream long into the finish.

About This Coffee

The Mossto process utilises mucilage from a previous batch of fermented cherries in the fermentation process. Mixing this mucilage together with a fresh harvest of ripe cherries allow the farmer to develop more of the coffee's inherent flavour qualities without the introduction of other additives, resulting in a deeply rich and complex natural sweetness.
Coupled with the fertile terroir and high mountainous elevation of Tibe Haro Uraga, this unique processing method brings forth layers of flavour that continuously evolve with each sip. We find that there is much to enjoy and discover when approaching the brewing of this coffee, and we invite you to share this joy with us!
