About This Coffee
This coffee is of the prized Pacamara variety, with beans noticeably larger than average that result in more flavour complexity during roasting. Coupled with a meticulous washed process, the resulting cup is clean and bright, allowing for each flavour nuance to be readily expressed via roasting.
Between 85 – 95% of the coffee grown in Bolivia is produced by smallholder farmers on farms ranging in size between 1 and 8 hectares and is grown in the fertile Yungas region by various producers in associated with APROCAFE.
Floaters and underripe cherries are sorted out before de-pulping and a 24 hour fermentation process, before undergoing a fully washed process where their mucilage is removed and the beans are dried in raised beds over 5-10 days.
