While the trend for many Indonesian coffees lean towards funky and fermented flavours of tropical fruits, Enrekang Sulawesi stands out with its distinctively clean character as a rare washed coffee from the region.
We have chosen to roast this coffee in a way that balances its bright orange peel notes with the sweetness of malt chocolate and lingering applewood long into the finish. What follows is a lasting and enjoyable flavour experience that pairs well with milk, yet retaining enough complexity to shine well on its own as a black coffee.

About This Coffee
This coffee is grown on the slopes of Gunung Latimojong, Sulawesi's tallest peak.
Strong diurnal shifts slow cherry maturation, building dense seeds with concentrated sweetness over the course of many months. The cultivar, Linie S-795, carries Indian and Typica lineage, prized for disease tolerance and its structured acidity.
For this lot, cherries are handpicked, sorted, and pulped, then dry-fermented around 48 hours in sealed bags. They are then washed and dried on raised beds with frequent turning to ensure consistency in moisture levels.
The results in the cup are the culmination of producer Yolan Tirta's efforts to showcase the capabilities of Sulawesi coffee through washed processing. Its an intentional decision thats more demanding in nature compared to the region's more popular wet hulling process, but we believe the results in the cup easily speak for itself!
